Make-ahead Tortellini and Meatballs

Here is another kid-friendly recipe that you can make ahead and freeze.  In fact, this is perhaps the easiest make-ahead kid-friendly freezer meal ever. I know it’s been quiet around here.  I had a medical procedure for hand pain almost a week ago, so my right hand has been almost completely out of commission. Needless to say, I’m incredibly right-handed and that makes things pretty difficult. This freezer meal is super easy and uses store bought ingredients. Trust me, that’s exactly what I need right now.

Make-ahead Tortellini and Meatballs

  • Two packages Trader Joe’s refrigerated tortellini. We like the three-cheese variety.
  • One package Earth’s Best Mini Meatballs
  • One jar marinara sauce.  I like this one because it’s delicious and has very little sugar.

Cooking day directions:

Cook the tortellini in a large stockpot. Once finished, dump into a bowl and mix with mini meatballs and marinara sauce. Allow to cool before placing in individual plastic containers and freezing. Hint: don’t fill the container all the way to the top.  You want to allow about 1/2″ so that you can “pop” the tortellini out onto a plate when you go to reheat it.

Reheating directions:

Flip the container over onto a microwaveable plate and push down to “pop” the frozen pasta/meatballs out onto a microwavable plate. Heat for 90 seconds – 2 minutes until heated through. Serve with grated Parmesan cheese.
